The sausage sandwich concession business was integral to the
success of the Youngstown-based DiRusso’s Sausage Inc. The smell of peppers and onions wafts through the air. Paper
cups are brimming with ketchup-covered, salty shoestring fries. A
handful of crunchy-sweet cotton candy sounds heavenly, and a
pleasantly puffy, powdered-sugared elephant ear beckons you for a
bite. With a variety of summer church festivals, community events,
street fairs and the Canfield Fair, the Mahoning Valley serves up
an extensive array of events featuring festive fair foods. Area caterers and food vendors who sell items at local events
agree that nothing beats a warm summer evening tasting tempting
treats such as fried cheese, popcorn, caramel apples and the
classic sausage sandwich. Originally referred to as the “Italian hot dog,” the sausage
sandwich concession business was integral to the success of the
Youngstown based DiRusso’s Sausage Inc. Specializing in creating old-world style sausage, DiRusso’s has
been in business for more than 50 years and the popularity of the
concessions spawned the company’s retail sales at area grocery
stores, said Amanda Sciola, DiRusso’s director of sales and
marketing.
Perfect bite. The medium-flavored Italian sausage link, which has a little
“bite” but features the “perfect blend” of spices is the company’s
top seller and is sold at all concession trailers, Sciola said.
The recipe was created by the grandmother of Robert DiRusso,
DiRusso’s CEO. DiRusso’s sells its famed sandwiches at more than 50 area fairs
and festivals annually and features nine trailers at the Canfield
Fair.

DiRusso Sausage Links Expansion with Growth

A focus on quality assurance, improved packaging and products,
customer service and business expansion is the growth plan at
DiRusso’s Sausage Inc., Youngstown, reports owner Robert A.
DiRusso.
“Our annual sales growth has averaged 15% for the past seven
years, employment has increased to 30 and we’ve experienced a
100% increase in sausage production,” he reports.
DiRusso’s, a U.S.Department of Agriculture-inspected
manufacturer, completed a three-year, $1 million expansion last
year that included office and production space and 1,500 square
feet of cooler and freezer capacity. New loading docks, more than
$300,000 in equipment purchases, façade improvement and new
signage were additional upgrades.
“To facilitate our new docks, Caldwell Street, which had not
been in use for more than 20 years, was cleared and reopened with
the assistance of the city,” he notes.The general contractor on
the expansion project was Adolph Johnson & Sons.
DiRusso’s products are sold in more than 200 stores as well as
to food service operators. The company also sells its products
through concession trailers at festivals, a fund-raiser program
and a drive-through window at its plant in the Riverbend Business
Park.
Two new retail products – Turkey Italian Sausage Links and fully
cooked Italian Style Meatballs – contributed significantly to
recent sales growth, DiRusso says. “In 2007, we designed and
introduced a two-pound Pork Italian Sausage Pattie box for sale in
retail stores,” he notes.
Wholesale distribution of products through food distributors
contributed to recent sales growth as well. “Many local and
regional food-service providers offer our products on their
menus,” DiRusso says.
DiRusso’s Sausage, which moved to Youngstown in 1985, is active
in the Riverbend Business Park Association, formed 18 months ago
with the goal of revitalizing the Crescent Street industrial area.
Some 23 businesses operate in the Riverbend Business Park,
collectiving employing more than 700, DiRusso says.
